Nendram banana / Plantain banana powder for making porridge.
Buy plantain banana asking specifically for nendram variety which is very popular in Kerala. Buy raw plantain which is green in colour.
Wash the bananas well and remove the outer skin. Chop off the topmost and bottommost portions.
Take a slicer and make thin slices. If the slices are thick, they take longer to dry.
Spread the slices on a tray and keep it outside in hot sun to dry. You can cover with a very thin muslin cloth to prevent dust from settling.
Typically it should dry in a couple of days (depending on the weather). At night times, you can keep it under a fan inside the house.
Once fully dry, transfer to a mixie jar and make a fine powder. If it is not fully dry, it will form lumps while grinding. In that case, dry it further and grind again.
Once finely ground, transfer to an airtight container and you can store it in your freezer and use as needed.
